Ingredients Needed for Cottage Cheese Ice Cream

Here’s everything you need to make this high-protein, low-carb cottage cheese ice cream. Just a few simple ingredients create a smooth, creamy, and flavorful dessert:

  • Cottage Cheese – Use full-fat cottage cheese for the creamiest texture and richest flavor. It blends beautifully into a smooth base and adds a boost of protein to your ice cream.
  • Sugar-Free Honey – This adds natural sweetness without the carbs. You can also use keto maple syrup or your favorite sugar-free sweetener like monk fruit or allulose for a low-carb option.
  • Peanut Butter – Choose natural, unsweetened peanut butter with no added sugars or oils. It gives a rich, nutty flavor that pairs perfectly with the creamy texture of the cottage cheese.
  • Vanilla Extract – Adds a warm and aromatic flavor that enhances the sweetness and overall taste. Use pure vanilla extract for the best results.
  • Sugar-Free Chocolate Chips – Mix in some keto-friendly chocolate chips (like Lily’s or ChocZero) for a satisfying chocolatey bite. You can also add dark chocolate chunks or chopped nuts as variations.

What Sweetener To Use?

I love using this liquid allulose syrup as it is a great choice for sweetening ice cream. It can help maintain a smooth texture due to its ability to resist crystallization, making it ideal for ice cream.

You can also use a Powdered Monk Fruit Allulose Blend, which combines the sweetness of allulose with the natural sweetness of monk fruit extract.

Another alternative is xylitol, a sugar alcohol that is commonly used as a sweetener. However, it’s important to note that xylitol is toxic to dogs, so it should be used with caution, especially if you have pets in your home.

How To Serve

  • Cottage Cheese Ice Cream Sandwiches: Spread softened cottage cheese ice cream between two almond flour cookies or keto chocolate chip cookies. Roll the edges in mini chocolate chips or chopped nuts for a playful twist on the classic ice cream sandwich.
  • Toppings: Set up a toppings bar with a variety of options, such as crushed cookies, sprinkles, diced fruit, chocolate chips, and whipped cream.
  • Cottage Cheese Ice Cream Parfait: Layer cottage cheese ice cream with granola, fresh fruit, and a drizzle of honey or sugar-free maple syrup in a transparent Repeat the layers until the glass is filled, then serve.

Recipe Variations

  • Chocolate: Mix in 1 tablespoon of cocoa powder for a rich chocolatey flavor.
  • Fruits: Blend in your choice of fruit, such as strawberries, blueberries, or raspberries, for a burst of fruity goodness.
  • Boozy Infusion: Add a splash of liqueur or spirit like Irish cream, bourbon, or rum. Serve with boozy caramel sauce or a shot of espresso.
  • Coffee: Incorporate espresso or coffee. Top with whipped cream and cocoa powder or chocolate-covered espresso beans.
  • Nuts: Replace chocolate chips with chopped nuts like almonds, pecans, walnuts, or pistachios for a crunchy, nutty texture.
  • Pumpkin: Use seasonal ingredients like pumpkin puree and fall spices such as cinnamon, nutmeg, cardamom, or pumpkin pie spice.

How To Store

Freezing: If you have any leftover cottage cheese ice cream, store it in a freezer-safe container for up to 2 months.

Thawing: When you’re ready to enjoy the ice cream, transfer it from the freezer to the refrigerator for about 20 minutes to soften slightly before scooping.

Description

This creamy cottage cheese ice cream is incredibly smooth, naturally sweet, and made with just three simple ingredients. All you need is full-fat cottage cheese, your preferred low-carb sweetener, and a few chocolate chips for a delicious treat that comes together in minutes—no ice cream maker required.

Ingredients

  • 2 cups cottage cheese full-fat, such as Good Culture
  • 1/3 cup liquid sweetener sugar-free honey or agave syrup
  • 2 tbsp peanut butter or almond butter or cashew butter

Optional:

Instructions

  • Start by placing the cottage cheese in a blender. Make sure to scoop it all out of the container. Blend on high speed for about 1-2 minutes or until the cottage cheese becomes very smooth and creamy. This step is crucial for a creamy ice cream texture.
  • Add your sweetener and peanut butter to the smooth cottage cheese. If you're using vanilla extract, add it now as well. Blend again on medium speed for another minute until all ingredients are well mixed and the mixture is smooth.
  • Using a spatula, gently stir in the chocolate chips to the mixture or blend the chocolate chips into the mixture.
  • Transfer the ice cream mixture into a freezer-safe container. You can use a loaf pan or any other container. Smooth the top with a spatula. Cover the container with a lid or plastic wrap to prevent ice crystals from forming.
  • Place the container in the freezer. Freeze the mixture for at least 3-4 hours.
  • Before serving, remove the ice cream from the freezer. Let it sit at room temperature for about 15-20 minutes.

Notes

Feel free to change the sweetness or add other things like nuts or fruit to your ice cream.
Adjust the amount of sweetener based on your preference. More sweetener can be added for a sweeter taste.
Experiment with other mix-ins like nuts, berries, or crushed cookies to customize your ice cream.

This came out perfect! It’s the easiest best cottage cheese ice cream I’ve made yet! I did mine in the food processor. Split the mixture in half so I could make chocolate out of half. Just added Dutch Process Cocoa powder, a pinch of instant espresso & a drop more sweetener. Delicious! Thanks for the great recipe!
