What Sweetener To Use?
I love using this liquid allulose syrup as it is a great choice for sweetening ice cream. It can help maintain a smooth texture due to its ability to resist crystallization, making it ideal for ice cream.
You can also use a Powdered Monk Fruit Allulose Blend, which combines the sweetness of allulose with the natural sweetness of monk fruit extract.
Another alternative is xylitol, a sugar alcohol that is commonly used as a sweetener. However, it’s important to note that xylitol is toxic to dogs, so it should be used with caution, especially if you have pets in your home.

Easy Cottage Cheese Ice Cream
Description
Ingredients
- 2 cups full-fat cottage cheese such as Good Culture
- 1/3 cup liquid sweetener sugar-free honey or agave syrup
- 2 tbsp peanut butter or almond butter or cashew butter
Optional:
- 1 tsp vanilla extract
- 2 tbsp chocolate chips
Instructions
- Start by placing the cottage cheese in a blender. Make sure to scoop it all out of the container. Blend on high speed for about 1-2 minutes or until the cottage cheese becomes very smooth and creamy. This step is crucial for a creamy ice cream texture.
- Add your sweetener and peanut butter to the smooth cottage cheese. If you're using vanilla extract, add it now as well. Blend again on medium speed for another minute until all ingredients are well mixed and the mixture is smooth.
- Using a spatula, gently stir in the chocolate chips to the mixture or blend the chocolate chips into the mixture.
- Transfer the ice cream mixture into a freezer-safe container. You can use a loaf pan or any other container. Smooth the top with a spatula. Cover the container with a lid or plastic wrap to prevent ice crystals from forming.
- Place the container in the freezer. Freeze the mixture for at least 3-4 hours.
- Before serving, remove the ice cream from the freezer. Let it sit at room temperature for about 15-20 minutes.
Notes
Adjust the amount of sweetener based on your preference. More sweetener can be added for a sweeter taste.
Experiment with other mix-ins like nuts, berries, or crushed cookies to customize your ice cream.

This came out perfect! It’s the easiest best cottage cheese ice cream I’ve made yet! I did mine in the food processor. Split the mixture in half so I could make chocolate out of half. Just added Dutch Process Cocoa powder, a pinch of instant espresso & a drop more sweetener. Delicious! Thanks for the great recipe!
