  • 2 lbs carrots washed peeled, and cut in half
  • 2 tbsp olive oil
  • 1 tsp salt
  • ¼ tsp black pepper
  • fresh parsley to garnish


  • Preheat oven to 425°F/220°C and line a baking sheet pan with parchment paper.
  • Wash and cut the carrots equal in size.
