Ingredients for These Keto Twix Bars

You only need a few simple, low-carb ingredients to make these delicious, homemade keto Twix bars. Each layer is made from pantry staples you likely already have if you’re following a gluten-free or keto lifestyle!

For the Shortbread Crust

  • Almond Flour: Use blanched, superfine almond flour (not almond meal) for the best shortbread-like texture. It gives the base a delicate crumb and holds together beautifully.
  • Powdered Sweetener: Choose your preferred keto-friendly sweetener, such as powdered erythritolmonk fruit, or allulose. Powdered forms blend better into the dough and ensure a smooth texture.
  • Unsalted Butter: Helps create that rich, melt-in-your-mouth shortbread flavor. Make sure it’s softened slightly for easier mixing.
  • Salt: Just a pinch helps bring out the buttery, nutty flavor of the crust.

For the Caramel Layer

  • Keto Caramel Sauce: Use my easy homemade keto caramel recipe for the most buttery, rich, and smooth caramel layer. It’s made with simple ingredients like butter, cream, and sweetener—no cornstarch or sugar needed.

For the Chocolate Topping

  • Sugar-Free Chocolate Chips or Bars: Use a good-quality low-carb chocolate, such as unsweetened baking chocolate or stevia-sweetened chocolate chips. Brands like Lily’s, ChocZero, or Hu Kitchen work well.
  • Optional: Coconut Oil or Butter: Add 1–2 teaspoons to the melted chocolate for a glossier finish and smoother texture when spreading.

How To Make These Delicious Keto Twix Bars

Once you see how simple it is to make keto Twix bars at home, you’ll never go back to the store-bought kind! With just a few easy steps, you’ll have the perfect low-carb layered treat ready to enjoy. Here’s how to make them:

Make the Crust

  • In a mixing bowl, combine all the crust ingredients: blanched almond flourpowdered sweetenerunsalted butter, and a pinch of salt.
  • Mix until a soft dough forms.

Bake the Crust

  • Press the dough evenly into a parchment-lined baking dish (an 8×8-inch pan works great). Bake at 350°F (175°C) for about 18–20 minutes, or until the edges are golden brown.
  • Let the crust cool completely before adding the next layer.

Make the Keto Caramel

  • While the crust cools, prepare your homemade keto caramel sauce (link to your recipe if available). Let the caramel cool for 10 minutes so it thickens slightly.

Add the Caramel Layer

  • Pour the cooled caramel evenly over the cooled crust.
  • Transfer the pan to the freezer and let it chill for about 1 hour, or until the caramel is firm to the touch.

Add the Chocolate Topping

  • Melt your favorite sugar-free chocolate (with a teaspoon of coconut oil or butter, if desired) in the microwave or a double boiler.
  • Spread the melted chocolate evenly over the chilled caramel layer using a knife or offset spatula.

Chill and Set

  • Place the pan in the refrigerator for about 30 minutes, or until the chocolate is completely set.
  • Once firm, slice into bars and enjoy!

Tips For Making The Best Keto Twis Bars

  • Make the Caramel Ahead of Time. Keto caramel sauce takes time to cool and thicken, so feel free to prepare it in advance and store it in the fridge. Let it come to room temperature before pouring it over the crust.
  • Add a Pinch of Salt on Top. A light sprinkle of sea salt or flaky salt on top of the chocolate adds a perfect contrast to the sweetness of the caramel and enhances the overall flavor. Think of it as a little finishing touch that takes these bars to the next level.
  • How to Melt Chocolate Properly. Melt your sugar-free chocolate in the microwave using 15-second intervals, stirring well between each round with a rubber spatula or spoon. This prevents burning and ensures the chocolate melts smoothly.
  • Freeze to Set the Layers. For clean, defined layers, make sure each one sets properly before adding the next. Chill the caramel layer in the freezer for at least 1 hour before adding the chocolate.
  • Clean Slicing Tip. For clean, even slices, dip your knife in hot water, wipe it dry, and cut through the bars. Repeat between cuts for neat edges that show off each layer.

Storing Ideas

  • Fridge: Place the bars in an airtight container and store them in the refrigerator for up to 7 days. For best texture, let them sit at room temperature for a few minutes before serving—this softens the caramel slightly and makes them even more enjoyable.
  • Freezer: These bars are freezer-friendly, too! Store them in a freezer-safe container or zip-top bag with parchment paper between layers to prevent sticking.
They’ll keep well for up to 1 month. When you’re ready to enjoy one, simply let it thaw at room temperature for 15–20 minutes.

Frequently Asked Questions

If your crust dough is too crumbly, you can adjust that by adding an extra tbsp of melted butter or coconut oil and mixing again until it has the right consistency.

Can I Make These Keto Twix Bars With Coconut Flour?

Since coconut flour has different proprieties than almond flour, you can’t switch them.

Do I Need To Use Homemade Keto Caramel?

You’ll get the best results with homemade keto caramel, especially if you want that rich, buttery flavor and clean ingredients. However, if you’re short on time, a store-bought sugar-free caramel sauce (with clean ingredients) can work in a pinch.
