Preheat your oven to 350°F/180°C and thoroughly grease a 16-mini muffin tray with cooking oil spray.

Mix the Wet Ingredients

Combine the melted butter, egg, and vanilla extract in a large mixing bowl. Mix these ingredients for approximately 3 minutes until they are well combined.

Stir In the Dry Ingredients

Add over the wet ingredients the almond flour, sweetener, baking powder, xanthan gum, and salt. Mix until the dough mixture is lump-free and smooth.

Fold In the Chocolate Chips

Gently fold in the unsweetened chocolate chips using a silicone spatula. 

Forming and Shaping the Dough

Shape your cookie dough into small balls and place them into the muffin tin. Press lightly in the center of each dough ball using a measuring spoon to create a well.
