Ingredients
  

  • 1/2 cup medium onion diced
  • 2 garlic cloves minced
  • 5 cups chicken broth
  • 3 cups broccoli cut into small bits
  • 2 cups cheddar cheese shredded
  • 1 cup heavy whipping cream
  • 1 tsp xanthan gum
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp smoked paprika
  • 4 slices bacon fried and crumbled
  • 1/4 cup cheddar cheese shredded

Instructions
 

  • In a large pot over medium heat, melt the butter.
  • Add the diced onions and sauté for 2-3 minutes until they turn translucent.
  • Stir in the minced garlic and cook for about 30 seconds, ensuring it doesn't burn.
  • Add the broccoli to the pot, coating it well with the buttery onion-garlic mixture.
  • Pour in the chicken broth and slightly increase the heat to bring the mixture to a gentle simmer. Let it cook for about 10 minutes or until the broccoli softens to your liking.
  • Once the broccoli is tender, reduce the heat to low.
  • Add the heavy cream, salt, pepper, and smoked paprika. If you're using xanthan gum for thickening, sprinkle it in now and stir constantly to prevent clumping. Let the mixture gently boil for an additional two minutes to meld the flavors.
  • Turn off the heat, and gradually add the shredded cheddar, stirring continuously to ensure smooth melting.
  • Serve the creamy soup in individual bowls, garnishing each serving with a sprinkle of shredded cheddar and a generous topping of crumbled bacon.
