This keto hot chocolate is rich, creamy, decadent, super thick with an intense chocolate flavor. Serve with sugar-free homemade whipped cream for a delicious treat.

I love drinking coffee, and often I have a Bulletproof coffee because it’s delicious. With the weather getting so cold, I prefer more warm drinks, and I usually make a cup of tea or hot chocolate. As you know I’m a huuuuge huge chocolate fan and I also love a piece of my fudgy keto brownies or a chocolate mug cake to have with my drink.
Hot chocolate is a drink that can be made either from cocoa powder or chopped unsweetened chocolate.
Ingredients
- 2 tablespoons unsweetened cocoa powder
- 2-3 tablespoons Erythritol – Feel free to use your favorite sweeteners such as Monk Fruit, Xylitol (extremely toxic for dogs), or Granulated Stevia.
- 1/2 cup heavy whipping – For a dairy-free vegan hot chocolate option, use canned coconut milk.
- 2 cups unsweetened almond milk or macadamia nut milk
- 1 teaspoon pure vanilla extract
- ½ tsp xanthan gum or 1 tbsp chia seeds powder or 1 tbsp coconut flour (to thicken)

How to Make Thick Keto Hot Chocolate
There are three ways to make a super thick and creamy hot chocolate. To thicken this drink naturally, I use either xanthan gum that adds zero carbs, chia seeds powder, or coconut flour.
- Start by dissolving the cocoa powder and sweetener with a few tablespoons of almond milk to avoid the clumps.
- Pour in the heavy whipping cream or the coconut milk, and almond milk mixing constantly. Put the saucepan over medium heat until it starts to simmer.
- Mix in a slurry with the preferred thickener. Slowly whisk into the hot chocolate until thickened.
- Remove from heat and stir in vanilla extract. Taste and adjust the sweetness.
It’s so thick and has a pudding-like texture; you’ll need a tablespoon or a large straw to enjoy it.

Thicken with Chia Seeds
Chia seeds are known for their fantastic thickening property. Using these seeds means first to grind them into a fine powder. If that’s too time-consuming for you, I have two other alternatives.
Use Xanthan gum
To thicken the hot chocolate with xanthan gum, you’ll need to use just a little bit. It has zero carbs and also thickens sauces, stews. Start with ¼ of a teaspoon and add more as needed. Too much xanthan gum can make the drink very slimy.
Add coconut flour
Whisk one tablespoon of coconut flour with a few tablespoons of water to create a slurry and then add to the simmering hot chocolate.

Instructions
- In a medium saucepan, whisk cocoa powder and the Erythritol with a few tablespoons of liquid to break up all the cocoa lumps.
- Pour in the heavy whipping cream or the coconut milk, and almond milk mixing constantly.
- Put the saucepan over medium heat until it starts to simmer. Be careful not to let the milk come to a boil.
- Whisk a little xanthan gum/ coconut flour/ chia seeds powder coconut flour with a few tablespoons of water to create a slurry and then add to the simmering hot chocolate.
- Remove from heat and stir in vanilla extract. Taste and adjust the sweetness.
- Garnish with whipped cream and chocolate shavings and enjoy!
