delicious sugar-free hot chocolate recipe

I love drinking coffee, and often I have a Bulletproof coffee because it’s delicious. With the weather getting so cold, I prefer more warm drinks, and I usually make a cup of tea or hot chocolate. As you know I’m a huuuuge huge chocolate fan and I also love a piece of my fudgy keto brownies or a chocolate mug cake to have with my drink.

Hot chocolate is a drink that can be made either from cocoa powder or chopped unsweetened chocolate.

Ingredients

  • 2 tablespoons unsweetened cocoa powder
  • 2-3 tablespoons Erythritol – Feel free to use your favorite sweeteners such as Monk Fruit, Xylitol (extremely toxic for dogs), or Granulated Stevia.
  • 1/2 cup heavy whipping – For a dairy-free vegan hot chocolate option, use canned coconut milk.
  • 2 cups unsweetened almond milk or macadamia nut milk
  • 1 teaspoon pure vanilla extract
  • ½ tsp xanthan gum or 1 tbsp chia seeds powder or 1 tbsp coconut flour (to thicken)

How to Make Thick Keto Hot Chocolate

There are three ways to make a super thick and creamy hot chocolate. To thicken this drink naturally, I use either xanthan gum that adds zero carbs, chia seeds powder, or coconut flour.

  1. Start by dissolving the cocoa powder and sweetener with a few tablespoons of almond milk to avoid the clumps.
  2. Pour in the heavy whipping cream or the coconut milk, and almond milk mixing constantly. Put the saucepan over medium heat until it starts to simmer.
  3. Mix in a slurry with the preferred thickener. Slowly whisk into the hot chocolate until thickened.
  4. Remove from heat and stir in vanilla extract. Taste and adjust the sweetness.

It’s so thick and has a pudding-like texture; you’ll need a tablespoon or a large straw to enjoy it.

Thicken with Chia Seeds

Chia seeds are known for their fantastic thickening property. Using these seeds means first to grind them into a fine powder. If that’s too time-consuming for you, I have two other alternatives.

Use Xanthan gum

To thicken the hot chocolate with xanthan gum, you’ll need to use just a little bit. It has zero carbs and also thickens sauces, stews. Start with ¼ of a teaspoon and add more as needed. Too much xanthan gum can make the drink very slimy.

Add coconut flour

Whisk one tablespoon of coconut flour with a few tablespoons of water to create a slurry and then add to the simmering hot chocolate.
