I love drinking coffee, and often I have Bulletproof coffee because it’s delicious. With the weather getting so cold, I prefer warm drinks, and I usually make a cup of tea or hot chocolate. As you know, I’m a huuuuge huge chocolate fan, and I also love a piece of my fudgy keto brownies or a chocolate mug cake to have with my drink. 

Hot chocolate is a drink that can be made either from cocoa powder or chopped unsweetened chocolate.

Is Hot Chocolate Keto-Friendly?

Regular hot chocolate is not keto-friendly since it is made with full-fat milk and other ingredients that add a lot of calories that are not good for keto.

But fortunately, you can still enjoy a warm cup of hot chocolate on a cold day using our recipe, that’s made from naturally low-carb ingredients and tastes even better than a regular one.

Another great thing about this recipe is that it uses only a few easy and naturally low-carb ingredients you probably already have in your pantry. Here is everything you will need:

  • Cocoa Powder – use unsweetened cocoa powder of the best quality that you can find.
  • Sweetener – Feel free to use your favorite sweeteners such as Monk Fruit, Xylitol, or Erythritol.
  • Heavy Whipping Cream – You can use canned coconut milk for a dairy-free vegan hot chocolate option.
  •  Almond Milk – you will need unsweetened almond milk or replace it with macadamia or coconut.
  • Vanilla Extract – use the best quality vanilla extract for a better texture.
  • Xanthan Gum – is used to thicken hot chocolate.

How to Make This Thick&Creamy Keto Hot Chocolate

There are three ways to make a super thick and creamy hot chocolate. To thicken this drink naturally, I use either xanthan gum that adds zero carbs, chia seeds powder, or coconut flour.

  1. Start by dissolving the cocoa powder and sweetener with a few tablespoons of almond milk to avoid clumping.
  2. Pour in the heavy whipping cream and almond milk, mixing constantly. Put the saucepan over medium heat until it starts to simmer.
  3. Mix in a slurry with the preferred thickener. Slowly whisk into the hot chocolate until thickened.  
  4. Remove from heat and stir in vanilla extract. Taste and adjust the sweetness.

It’s so thick and has a pudding-like texture; you’ll need a tablespoon or a large straw to enjoy it.

3 Ways To Thicken Hot Chocolate

Thicken with Chia Seeds

Chia seeds are known for their fantastic thickening property. However, using these seeds means first grinding them into a fine powder. If that’s too time-consuming for you, I have two other alternatives.

Use Xanthan gum

You’ll need to use just a little to thicken the hot chocolate with xanthan gum. It has zero carbs and also thickens sauces and stews. Start with ¼ of a teaspoon and add more as needed. Too much xanthan gum can make the drink very slimy.

Add Coconut Flour

Whisk one tablespoon of coconut flour with a few tablespoons of water to create a slurry, and then add to the simmering hot chocolate.

Recipe Variations

  • You can make it with pumpkin flavor by adding 1 tablespoon of pumpkin puree and 1 teaspoon of pumpkin pie spice to the saucepan before simmering.
  • I like adding 2 teaspoons of peppermint extract to the ingredients while simmering.
  • Add one tbsp of instant coffee or decaf coffee.

Storing Ideas

I like enjoying this hot chocolate fresh since it tastes better, but if there are any leftovers(which is hard to believe), you can store them in the fridge for 3 days and reheat them on the stovetop for a few minutes.

Ingredients
  

  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons granulated sweetener or Monk Fruit sweetener
  • ½ cup heavy whipping cream or canned coconut milk
  • 2 cups unsweetened almond milk or macadamia nut milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon xanthan gum or 1 tablespoon chia seeds powder or coconut flour

Serving Suggestions

  • Whipped cream
  • Chocolate shavings

Instructions
 

  • In a medium saucepan, whisk cocoa powder and the Erythritol with a few tablespoons of liquid to break up all the cocoa lumps.
  • Pour in the heavy whipping cream or the coconut milk, and almond milk mixing constantly.
  • Put the saucepan over medium heat until it starts to simmer. Be careful not to let the milk come to a boil.
  • Whisk a little xanthan gum/ coconut flour/ chia seeds powder coconut flour with a few tablespoons of water to create a slurry and then add to the simmering hot chocolate.
  • Remove from heat and stir in vanilla extract. Taste and adjust the sweetness.
  • Garnish with whipped cream and chocolate shavings and enjoy!
