1. In a small bowl, combine the lime juice and gelatin powder and microwave for 30 seconds until warm.

2.Add room temperature cream cheese, heavy cream, powdered sweetener, lime zest, and vanilla extract to a large bowl.

3. Pour the prepared gelatin mixture and mix until well incorporated.

4.– Divide evenly between 8 serving glasses and refrigerate for at least 2 hours.
