– 2 cups heavy cream – 6 egg yolk – 6 tbsp erythritol  – ¼ tsp sea salt – 1 vanilla bean whole

STEPS 1&2

Scrape out all the seeds from the vanilla bean. Pour the heavy cream into a pot and bring to a boil.

In a medium bowl, add the egg yolks and the sweetener and whisk until combined.

STEP 3

 Slowly incorporate the hot cream into the egg yolk mixture and whisk to combine.

STEP 4

Pour the mixture into the six 4-oz ramekins and bake for 30 minutes.

STEPS 6&7

 Remove the custard from the oven and allow it to get to room temperature, then refrigerate.

Sprinkle about 1 tsp of sweetener on top and use a kitchen torch to caramelize it.
