Place a large skillet over medium-high heat and add the olive oil.

Add the chicken thighs and season them with salt and pepper on both sides.

Sear chicken thighs on both sides for about 8 minutes on each side or until they are no longer pink in the middle. 

Remove chicken from the skillet and keep warm.

In the same pan, melt the butter.

Cook the mushrooms until golden brown for about 5 minutes. 

Add the garlic and saute for about 1 minute or until fragrant.

Stir in the heavy cream and bring to a simmer. 

Stir in the parmesan until completely melted. Taste and season with salt and pepper to taste.

Return the chicken thighs  to the pan.

Cook for 5 more minutes.
