Begin by cutting the chicken breasts into 1-inch bite-sized pieces.

In a large mixing bowl, combine the lemon juice, lemon zest, olive oil, minced garlic, dried oregano, dried parsley, paprika, salt, and pepper. Whisk until the ingredients meld together. 

Add the chicken pieces to the marinade, ensuring each piece is well-coated.

Cover the bowl with plastic wrap and let it marinate in the fridge for at least 30 minutes.

Thread the marinated chicken pieces onto wooden skewers.A

Preheat your grill to medium-high heat. 

Once the grill is ready, place the skewers on it and grill for about 4 minutes on each side or until the chicken is fully cooked and has a nice char.

While the chicken is grilling, whip up your homemade tzatziki sauce. Store in the fridge until ready to serve.
