Remove the mushroom stems.

Then finely chop them.

– Heat 2 tbsp of olive oil in a large skillet, add the onion.

Cook for 3 minutes until tender, then add the chopped mushroom stem

Stir until well combined and cook for 5 more minutes until soft.

– After the mushroom mixture is cooled, add the rest of the ingredients and mix until well combined.

– Arrange the mushrooms on the baking sheet and generously fill each one with the prepared filling mixture.

– Sprinkle each mushroom with parmesan cheese.

Bake them for 20 minutes.

– Garnish with fresh chopped parsley, and enjoy.
