Add shredded mozzarella cheese to a large bowl.

STEP 1

Microwave for about 60 seconds or until the cheese melts.

STEPS 2

Add the egg yolks, and xanthan gum.

STEPS 3

Stir thoroughly to combine and form a ball. Use a rolling pin to roll out the pasta until it is about 1/8-inch thin. Refrigerate for about 30 minutes.

STEPS 4&5

– Fill a large pan with water and bring to a boil. Once the water is boiling, cook the pasta for 1 minute.
