INGREDIENTS

– 2 cups almond flour superfine – 1 tsp baking powder – 1/2 cup sweetener – 4 large eggs room temperature – 2 tbsp coconut oil melted – 2 tsp lemon extract For the frosting – 8 oz cream cheese softened – 1 tsp lemon juice – 1/2 cup powdered sweetener

Add all the dry ingredients(almond flour, baking powder, sweetener) to a mixing bowl and mix until there are no lumps.

STEP 1

Add the rest of the ingredients over the dry mixture.

STEP 2

Mix until well combined.

STEP 3

Divide the batter evenly between the two prepared cake pans.

STEP 4

Bake for 25 minutes until firm to touch. Remove from the oven and allow to cool completely

STEP 5

Make the frosting. In a large mixing bowl, add all the ingredients and mix together until combined.

STEP 6

Assemble and decorate the lemon cake.
