KETO PUMPKIN SOUP

INGREDIENTS

– 5 oz pumpkin puree  – 4 cups vegetable broth – 1/3 cup heavy cream  – 1/4 cup onion  – 2 garlic cloves  – 1 tbsp unsalted butter  – 1/2 tsp pink salt – 1/2 tsp pepper – 1/2 tsp garlic powder – 1/2 tsp fresh thyme – 1/4 tsp cayenne pepper

Place a large saucepan over medium heat and add the butter.

Once melted, cook the onions and garlic for 5 minutes or until translucent.

Add the pumpkin puree, broth, salt, pepper, garlic, cayenne pepper, and fresh thyme.

Use a blender or an immersion blender to puree the soup.

Simmer for 20-25 minutes.  Remove the soup from the heat and stir in the heavy cream.

– Serve immediately, topped with keto croutons, heavy cream, and roasted pumpkin seeds.
