Slice the sausage into 1/2-inch rounds and cook them for a few minutes until browned.

Wash and chop up the vegetables to the same size.

Add the remaining olive oil to the same skillet and cook the vegetables for 7-8 minutes.

 Return the cooked sausage back to the skillet, and cook for 2 more minutes.

 Turn off the heat and garnish with fresh parsley.
