2tablespoons unsweetened cocoa powder
2tablespoonsgranulated Erythritolor Monk Fruit sweetener
½teaspoonxanthan gumor 1 tablespoon chia seeds powder or coconut flour

Instructions
In a medium saucepan, whisk cocoa powder and the Erythritol with a few tablespoons of liquid to break up all the cocoa lumps.
Pour in the heavy whipping cream or the coconut milk, and almond milk mixing constantly.
Put the saucepan over medium heat until it starts to simmer. Be careful not to let the milk come to a boil.
Whisk a little xanthan gum/ coconut flour/ chia seeds powder coconut flour with a few tablespoons of water to create a slurry and then add to the simmering hot chocolate.
Remove from heat and stir in vanilla extract. Taste and adjust the sweetness.
Garnish with whipped cream and chocolate shavings and enjoy!
