Keto Cranberry Muffins

INGREDIENTS

– 5 large eggs  – 2 cups almond flour  – 2 tbsp coconut flour – 3/4 cup cranberrie – 3 tbsp heavy cream – 3/4 cup sweetener – 3 tbsp butter melted – ½ tsp cinnamon – 1 tbsp orange zest – 1 tsp vanilla extract – 1 1/2 tsp baking powder

– In a large bowl, combine almond flour, coconut flour, cinnamon, and baking powder.

In a separate bowl, mix the eggs, orange zest (if using), sweetener, melted butter, heavy cream, and melted butter.

– Pour the wet ingredients over the dry ingredients.

 Mix until well combined.

– Use a silicone spatula to fold in the chopped cranberries.

Divide the batter between the prepared muffin tins.

– Bake for about 20-22 minutes until golden brown on top and completely cooked through.
