Keto Christmas Pudding

INGREDIENTS

– 2 egg – 1 large egg – 2 tbsp unsalted butter – 1 cup almond flour – 1 tbsp heavy cream – 1 tsp baking powder – 2 tsp cinnamon – 2 tsp cocoa powder – 2 tsp pumpkin spice – 2 tbsp sweetener – ½ cup shredded carrot – ¼ cup blueberries frozen – ¼ cup frozen cherrie – 1/4 cup crushed walnut – 1 tsp orange zest– 1/4 cup almond flour

Start by adding the egg to a large mixing bowl and mix until frothy.

Add the dry ingredients and mix until there are no lumps.

Now fold the dried fruits and chopped walnuts using a silicone spatula or a wooden spoon.

Spray a pyrex glass bowl with cooking oil spray. Add the pudding batter and microwave for 6 minutes at 700 W.

Remove from the microwave and turn out upsides down on a plate. Enjoy with ice cream or some whipped cream.
