Easy Cottage Cheese Ice Cream





Start by placing the cottage cheese in a blender. Make sure to scoop it all out of the container. Blend on high speed for about 1-2 minutes or until the cottage cheese becomes very smooth and creamy.

Add your sweetener and peanut butter to the smooth cottage cheese. If you're using vanilla extract, add it now as well. 

Blend again on medium speed for another minute until all ingredients are well mixed and the mixture is smooth.

Using a spatula, gently stir in the chocolate chips to the mixture or blend the chocolate chips into the mixture. Transfer the ice cream mixture into a freezer-safe container. 

Place the container in the freezer. Freeze the mixture for at least 3-4 hours.  Before serving, remove the ice cream from the freezer. Let it sit at room temperature for about 15-20 minutes.
