Cauliflower au Gratin

Gently wash the cauliflower head and pat dry.

STEP 1

Break into bite-sized florets.

STEP 2

Toss the cauliflower with olive oil, sea salt and black pepper. Roast in the preheated oven for 15-20 minutes.

STEP 3

Melt the butter in a large saucepan. Add the minced garlic and sauté for about 1 minute until fragrant,

STEP 4

Add the broth, salt, pepper, and nutmeg. Pour in the heavy cream, whisking continuously.  Allow the mixture to simmer, then lower the heat slightly.

STEP 5

– Transfer the roasted cauliflower to the bottom of an 8×11 or 9×13-inch baking dish.

STEP 6

Pour the creamy cheese sauce over the cauliflower and toss until well combined.

STEP 7

Sprinkle the remaining ½ cup of shredded cheddar cheese.

STEP 8

 Bake in the oven for 25-30 minutes or until the gratin is bubbly and the cheese is golden brown on top.
