  • Sour Cream – to make dairy-free ice cream, you can use canned coconut cream.
  • Vanilla Extract – Vanilla extract, in my opinion, should be used in any dessert recipe because it has a flavor that everyone enjoys.
  • Heavy Cream – this ingredient makes the ice cream extra creamy!
  • Cream Cheese
  • Vodka is optional but makes the ice cream super smooth, and creamy and prevents it from getting too hard. It also makes it scoopable.

How To Make Keto Strawberry Ice Cream

I haven’t bought any ice cream from the store since I discovered this recipe, and I’m sure you’ll do the same when you see how easy and delicious it is. So here is everything you have to do:

Preparing the Strawberries

Start with fresh ripe strawberries. Wash them under cold running water and pat them dry with a paper towel.

Remove the stems and leaves from the strawberries using a sharp knife. You can also use a strawberry huller to do this.

Making The Keto Strawberry Ice Cream

Add the strawberries and sweetener to a food processor and blend until well combined and some chunks of strawberries remain in the mixture.

Incorporate the sour cream, softened cream cheese, and vanilla extract until there are no lumps.

Whip the heavy cream: In a mixing bowl, mix the heavy cream until stiff peaks form.

Fold the whipped cream into the strawberry mixture until just combined. Use a rubber spatula.

Freezing

Transfer the mixture into an airtight container or to your favorite ice cream molds.

Freeze for at least 6 hours, stirring every 30 minutes. If you’re using an ice cream maker, skip this step.

Using An Ice Cream Maker

If you prefer to make keto strawberry ice cream using an ice cream maker, here are the directions:

  1. Skip the step of whipping it into stiff peaks and whisk the heavy cream into the strawberry puree and sour cream mixture, along with powdered sweetener. Make sure all ingredients are well combined.
  2. Refrigerate the mixture until it is fully chilled. It’s recommended to chill it for at least 4 hours or overnight for best results.
  3. Once the mixture is chilled, transfer it to your ice cream maker and churn according to the manufacturer’s instructions. Usually, it takes about 20-25 minutes for the ice cream to reach soft-serve consistency.
  4. Transfer the churned ice cream to an airtight container and freeze it for at least 2-3 hours, or until it is fully frozen.
  5. Before serving, let the ice cream sit at room temperature for 5-10 minutes to soften. Or, if it’s too hard, you can microwave it for a few seconds to make it more scoopable.

Note: If your ice cream maker has a small capacity, you may need to churn the mixture in batches or adjust the recipe accordingly.

  • 8 oz strawberries fresh or frozen
  • 1 cup heavy cream
  • 2/3 cup powdered sweetener
  • 1/2 cup sour cream room temperature
  • 1/2 cup cream cheese room temperature
  • 1 tsp vanilla extract
  • 2 tbsp vodka

Instructions
 

  • Place the strawberries, powdered sweetener, and vodka (optional) into a food processor. Blend until almost smooth, but a few chunks of strawberries remain.
  • Add the strawberry mixture to a large bowl. Add the sour cream, cream cheese, and vanilla extract to the strawberry mixture and whisk until well combined.
  • In another large bowl, whip the heavy for about 3 minutes or until stiff peaks form. Gently fold into the strawberry mixture.
