  • Yellow Squash – zucchini or chayote can be successfully used as apple replacements on a keto diet. They have a neutral flavor which allows them to absorb all the spices. I used yellow zucchini, but regular feel free to use peeled regular zucchini. 
  • Butter – use unsalted butter, or you can replace it with coconut oil.
  • Sweetener – Use your favorite sweetener to give the pie a hint of sweetness and make it sticky and gooey. I prefer a keto brown sugar alternative for the greatest flavor, but any sweetener will do.
  • Lemon Juice – this ingredient gives the pie a tangy and sweet flavor typical to regular apple pie.
  • Nutmeg – it will give that sweet and spicy flavor specific to holiday desserts.
  • Vanilla and Apple Extract – use the best quality you can find for an intense flavor.
  • Xanthan Gum  to thicken the sugar-free apple pie filling.

Make a double batch of my low carb apple pie crust. You’ll need to par-bake one crust and use the other dough to create the beautiful lattice.

  • Almond Flour – this is one of the best low-carb flour substitutes used to create the best keto pie crust.
  • Sweetener – feel free to use any keto powdered sweetener, such as erythritol, monk fruit, xylitol, or allulose.
  • Butter – use room-temperature unsalted butter, or you can replace it with coconut oil for a dairy-free pie crust.
  • Egg – help everything to bind together.
  • Vanilla Extract – use a high-quality vanilla extract for a better taste.
  • Xanthan Gum – helps the pie crust roll out, preventing breaking it during the rolling process. 
  • Salt – is used to enhance all the flavors.

How To Make Keto Apple Pie

Although it seems like a lot of work to prepare this pie at first, you will see that it is quite easy to make. Here is everything you have to do:

  1. Start by making the pie crust using this recipe that is great for many other pie recipes, like this keto pumpkin pie.
  2. Wash, peel and cut your yellow squash.
  3. Make the pie filling – cook the squash cubes in melted butter until soft. Stir in the sweetener, lemon juice, cinnamon, and nutmeg. 
  4. Reduce the heat and simmer for 10 minutes. Sprinkle with xanthan gum and continue cooking for 2-3 minutes or until slightly thick.
  5. Incorporate vanilla extract and apple extract. Remove from the heat and allow to cool for 10-20 minutes. 
  6. Stir in the vanilla extract and set aside.
  7. Assemble the keto apple pie. Add the cooled pie filling over the crust and top with dough strips.
  8. Bake for 30-35 minutes or until golden.

KETO APPLE PIE FILLING:

  • 2 lbs yellow squash or zucchini diced into 1/2 inch pieces
  • 1/2 cup unsalted butter
  • 1 cup sweetener
  • 2 tbsp lemon juice
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tsp apple extract
  • 1/2 tsp xanthan gum or 2 tbsp coconut flour

Instructions
 

Make the keto apple pie filling

  • Place a large skillet over medium heat, melt the butter and add chopped yellow squash or zucchini slices. Stir in the sweetener, lemon juice, cinnamon, and nutmeg.
  • Reduce the heat and simmer for 10 minutes. Sprinkle with xanthan gum and continue cooking for 2-3 minutes or until slightly thick.
  • Remove the skillet from heat and stir in the vanilla extract and optional apple extract for extra apple flavor. Allow the filling to cool for 10-20 minutes.

Bake the Keto Apple Pie

  • Meanwhile, preheat the oven to 350F/180C.
  • Transfer the filling into the prepared pie crust.
  • Roll out the second pie crust dough on a lightly floured surface. Cut it into even strips using a pizza cutter or a sharp knife.
  • Create a lattice pattern on top of the pie by weaving the strips over and under each other. This will allow the filling to peek through.
  • Place the assembled pie into the preheated oven. Bake for 30-35 minutes or until the crust looks golden brown and the filling is bubbly.
  • Once the pie is done baking, carefully remove it from the oven and allow it to cool completely on a wire rack. This will help the filling set.

Notes

If you notice that the edges of the crust start to brown too quickly, you can cover them with aluminum foil to prevent over-browning.
Serve  your keto “apple” pie with homemade whipped cream made with keto-friendly sweeteners or a scoop of keto-friendly ice cream for a delicious dessert.
