Melt the butter in a large nonstick skillet, and cook the onion for 3 minutes until tender.

Add the minced garlic and cook for 2 more minutes.

 Add the shrimp and sear them for 2 minutes on each side until pink.

Add the chopped sun-dried tomatoes, heavy cream, parmesan cheese, salt, and pepper, and simmer until the parmesan is melted and the sauce thickens.

Now you can add the fresh spinach and cook until it reduces its volume.

Season with italian herbs and mix until everything is well combined.

Turn off the heat and garnish with chopped parsley.
