– It doesn’t use oats, grains, or wheat, but it tastes like classic oatmeal. – It’s incredibly convenient since it’s ready in just 5 minutes. – It’s easy to meal prep, allowing you to make a week’s worth of breakfasts in advance.

Add all the ingredients to a medium saucepan, except the vanilla extract. 

Stir well to combine.

Place the saucepan over medium heat and bring to a boil stirring continuously. Simmer for about 2 minutes until it starts to thicken. 

Transfer to a serving bowl.
